I was finally able to get in contact with Simon Peter. Internet service there is sketchy at best and he only has access while at the seminary. Baby Christina Marie is off oxygen and doing much better, but has a long road to full recovery. Thanks so much for all your prayers, thought, and candles, and if you could continue to include them, it would be much appreciated.

HAPPY HUMP DAY! It's been a bit busy here...nothing too major, just closet cleaning, floors, dusting...you know the normal stuff, but it just seems like my days are getting away from me. On Monday evening we made fried chicken, gizzards, and zucchini. I breaded them all and they were delicious. We received our first box of Carbquik on Saturday afternoon, and it has a great recipe for breading. The total carbs are still a bit high, but net carbs? Awesome! 1 net per serving, which means that each piece of fried chicken had between 1-2 grams of net carbs. It was awesome and I was happy. I also made cheddar bay biscuits (2 net carbs per biscuit) and some gravy for our mashed "faux"tatoes. The true test though, as anyone knows, is how the fried chicken tasted cold. It was fabulous. I love cold fried chicken and that is what I had for breakfast and lunch yesterday. Was it gluten free...alas, no, but that is why I follow the 80/20 rule that is mark Sisson talks about in the Primal Blueprint. WE (that would be the royal WE, lol) have decided that we will only fry like that once a month (I marked it on the calendar). I only made half a batch of biscuits (4) and we had one on Monday night and one last night. I did notice that the carbs from the Carbquik did not set off any cravings, which is a good thing. In 2 weeks I am going to try the pancakes for breakfast with some sausage (pigs in a blanket). I love pancakes with just butter wrapped around the sausage, with no syrup, although I have some sugar free in the pantry should I decide to indulge.

Well, enough about that. We grilled some steaks and shrimp last night for dinner, after I finished cleaning out the bathroom closet. How in the world do I accumulate so many partial bottles of stuff. I gave a lot of nail polish, make-up, body wash, shampoo, and creme rinse to my sweet niece, Lizzie. I had a full large bottle of Pantene creme rinse as well as a parial one, and I can't use it anymore, as I get a rash along my hair line that itches like crazy. She was so excited to get all that make up and polish! I had TONS! LOL Can you say packrat?

Today is gorgeous outside, and I may attempt to sneak in a walk before we leave to run errands and go to mom's house for the evening. We need to go to the pet store for turtle tank supplies, to Costco for a couple of things, and then to mom's. Those stores are close to her house, so we try to consolidate and go while we are down there.

The plan for tomorrow is to clean the turtle tank filters then work on the craft room. Every time I get ready to start down there, something comes up, but I really need to get organized before Vacation Bible School sneaks up on me! I have so much stuff that I have been saving (hoarding) to use for that. Shelves, storage drawers, and containers will go a long way toward keeping things organized and easily found.

Happy to hear little Christina is doing better. I had a box of carbquick that took me forever to use up, until I tried the pancakes...yummy with blueberries!

Dar, I was so relieved...I was worried when I couldn't reach him that things had worsened. I loved the breading mix and the biscuits, but will limit that to once a month. I am trying the pancakes soon. I love pigs in a blanket. LOL Hugs!

Heather, it is a low carb substitute for Bisquik, and no it is not gluten free. :( It is made from carbalose. I have not done any research on carbalose, but so far I like it! It has a lot of fiber per serving though, which is what helps with the net carbs. Hugs!

Erica, I was so happy when I finally heard from Simon Peter! I had really begun to worry. Yes, the fryday is marked, mainly for DH, since when it comes to fried foods, his sense of time is terribly skewed! lol My days just seem to past faster and faster! lol

Carol, I am so happy that the little angel is on the road to recovery. I saw in a previous journal that your middle name is Marie, after your grandmother. My grandmother's middle name was Marie and that is why I chose that name for Christina. Simon Peter was so kind in letting me help name her. What a great honor! Hope you have more sun today.
