I seem to be feeling "tip-top" these last couple days! I just cannot understand what changed but I am not complaining. I think it is because I finally worked a break into the middle of my work day so I am not going seven or eight hours straight! I feel less stressed and get to eat.

I know I am late on the KALE bandwagon around here. I made homemade Kale Chips - not awful. Bought Trader Joe's Nacho Kale Chips - much better.

Today, I made a great omelette with one egg, two egg whites, mushrooms, cheese and sauteed KALE. Yummy! It was more tasty than using spinach.

Who knew?

Tonight, I am attending a suicide survivor's group for the first time. My nephew's death continues to anger, confuse, and sadden me. Of course, I am doing much better than my brother and his wife.


Still grateful for:

- The people I love who love me back!
- The good health of my loved ones
- My FS Buddies who support and encourage me to continue
- "Butt-kicking" myself to a smaller size today

Well you even sound chipper..hope you continue to do so...Ah suicide is an ugly thing to deal with..theres always alot of what ifs...hope you find some relief from the class.....Haven't tried the kale chips..but have heard they are good..Have a great day..:O)

Glad you are doing better HCB. Nice having a break at work. I always take one for lunch. The kale chips take a while. I started with reg. kale at first then switched to the Lacinato which is perfect but very time consuming because you can't pull the leaves from the stem you have to cut them out. I am back to reg kale. I clean, dry and cut up a whole batch and put in a ziplock and have enough for about 3-4 days worth of after work snacks. I sometimes use romano or smokey paprika. Hope your group experience is successful.

I made a batch of kale chips but they got soggy in the baggy. I love them out of the oven. Hope you feel encouraged in your meeting.

Good for you on attending a group. Everyone's grief is so different. I'm glad you are getting in a better spot!! I too like Kale chips but that's about all. Hubby keeps growing greens but I find so many of them bitter. Your omelete sounds yummy though!

"Tip top" is what you deserve to be; so glad you were able to break up your day so you can eat and reduce stress. I hope the group is helpful. Ooh, I have to remember to stop by Trader Joe's & see if they carry the kale chips here! The kind I love frome Whole Foods went down in price, but is still spendy.

My daughter is big on making kale chips - because she's vegan, she uses nutritional yeast for the "cheese" and adds some other spices like garlic and onion powder. I was prepared to not like them but they're actually pretty good! Glad to hear you have found a way to break up your day and have some time to recharge. Good luck with the support group - I hope it helps.

I love sauteed kale-and agree it's tastier than spinach in an omelette! Hope tonight's group is helpful.

I am happy you are dealing with the situation now instead of later. I hope this group helps you along the way. I also just made my own kale chips yesterday... Not anything I particularly like but okay.
