It's been a stressful week, and I am a stress eater. Struggling trying to find something to replace comfort food....

Diet Calendar Entry for 31 January 2013:

We all have our own definitions of comfort foods, but I have found a new appreciation for cauliflower. Don't get me wrong, I will ever eat the stuff plain, but I will make homemade mac & cheese, but use chopped cauliflower, add some bacon, yummy. Or I love bacon cheeseburger soup and will make it pretty much the same, but sub cauliflower for potatoes and use heavy whipping cream instead of milk. I also found online an awesome flourless cookie recipe. Subbed in splenda for the sugar and made a pretty tasty cookie for only 2 carbs. Don't be afraid to experiment. You might be suprised what you like.
