HCB's Journal, 30 January 2013

I know many people already do this but I recently discovered it!

I love egg whites completely mixed into hot cooked oatmeal. I microwave the mixture two more minutes to cook the egg whites.

As long as the whites are thoroughly mixed into the oatmeal, they are tasteless BUT add fabulous texture and bulk.

Egg whites are fat free and zero carb - but make that oatmeal rock with protein!

It is a great breakfast on a cold, Minnesota morning. If you have not yet tried it, give it a whirl! The texture is light and fluffy. Yummy.

Still grateful for:

- The people I love who love me back!
- The good health of my loved ones
- My FS Buddies who support and encourage me to continue
- "Butt-kicking" myself to a smaller size today

Is this a flavored oatmeal that you use or just plain old oats? I find it tough to eat plain oatmeal, but maybe the egg whites add a little flavor?? Maybe I could add a little cinnamon or something.. Sounds interesting (haha my phone tried to autocorrect that to "inbreeding"?!") - I'll have to give that recipe a try! Thanks!

All I can think of is home made tapioca pudding - is it anything like that?

Erika - I use Quaker Instant Original Oats. I add sweetener and a dash of salt, sometimes a tiny bit of butter...weird, but that is how we ate it as kids.

Buffy - no, not pudding like at all. Make sure the oatmeal is hot when you drizzle in the egg whites, mix thoroughly and microwave another 90 seconds or two minutes. Stir again - light luffy texture and then add whatever tastes good to you.

Great idea! Definitely giving this a try. Before I have made little oatmeal "muffins" with just the oatmeal slightly cooked, dash milk, egg and mashed banana. Bake til the top is crispy. Definitely not a muffin in the traditional sense of the word, but a nice little treat with some hearty texture when you need a little something.

You're the second person I've read that does this - I am going to HAVE to try it now :-) I actually layer my cooked egg whites on top of the oatmeal so that I can taste each separate but, yeah, gonna have to test this out. I eat 'old fashioned' oats as they are processed less than Quick - usually add blueberries to my oatmeal after it's cooked - that eliminates the need for a sweetner or butter (for me) but I imagine the fruit may add more carbs than you want in one meal.

That sounds like a really great idea. Since I eat oatmeal almost every morning, I'm going to try this. Maybe save the yokes for french toast and sugary syrup. Just kidding - I think. I put a little honey on my oatmeal because I think oatmeal is pretty tasteless as well.

Sounds yummy. I might give myself a treat of oatmeal this weekend with egg whites. I still have some steel cut in my cupboard.

My daughter turned me onto that idea. The texture change is the best part!

Hmmm, might have to try that out! How many eggs per serving?
30 Jan 13 by member: Baxie
Baxie - I use two packets of the Quaker Instant Original Oats and then two or three egg whites depending on the size of the eggs.

I have a container of steel cut oats in my cupboard but have never used them - they just have to cook a lot longer or something, right? I might just get crazy and make myself some instant oats in the morning with the egg whites!! :) Is it bad that I'm strangely excited about it??

HCB, steel cut oats w/ egg whites is my new fav b-fast too! And, I've also been telling everyone... If only we could get a commission from Quaker, Eggland, anybody?!? I made a 4 serving batch of steel cut oats overnight in the crock pot & divided them into single serving portions which I then re-heat separately. I add a tsp of coconut oil while it's hot, mix it in well & then add 2 egg whites & mix it really well again & reheat. I add berries & with the coconut oil, find it sweet enough. Yum, is it breakfast time again yet?!?

HCB that sounds really healthy and delicious. I don't really eat oatmeal because of the diabetes, but I have had some oatmeal cookies my mom made. I could get the recipe - they are made with applesauce, raisins, dried cranberries and oatmeal. They are full of fiber, have no sugar and no fat, and are really tasty. I had like 4 of them and my blood sugar was normal. The egg whites sound really good, really beefing up the protein.
