My husband, Justin, has been on Atkins with me. He is surpassing me greatly with the weight loss. I am so proud of him for sticking to it for so long. But lately, he keeps mentioning that he wants ice cream. So, last night, I stuck the ice cream maker barrell in the freezer and found a recipe online for peanut butter ice cream (yummm). Oh, and it's a low carb recipe. So, first thing I did this morning was churn it. I did add in 2 Tbsp of semi sweet mini choc chips at his request. I tasted a small amount and it is soooo good. It doesn't even taste like it's sugar free.
So, now my dilema is whether or not a 1/2 cup will throw me out of ketosis. I was only able to reach ketosis by doing a 3 day fat fast. I'm not sure if I want to risk it, but I'm also not sure if I can resist the ice cream.
