Well, I have to admit, I like the tuna wrapped in romaine. Who'da thunk it? This gets my mind to thinking outside the box. If that tasted that good, what else could I wrap in lettuce that will enable me to enjoy culinary delights that I have avoided because of the bread? Now, don't get me wrong; I love bread - way too much! And anyone that knows me, knows that I am not of the Atkins persuasion. But most breads have a lot of refined elements that almost immediately go to sugar, and I eat way too much of it. I know, I know, there is the whole wheat variety that digests much more slowly, but let's face it, for what little it gives your body in terms of nutrition, it gives you a whole lot more in calories. I am a carnivore by nature, and I can eat a lot more carnage if I delete the bread. There's of course tuna salad, chicken salad, egg salad, and ham salad. Then there's sliced chicken, beef, ham, turkey, pork, duck, goose, dog - OK, no dog. And all that is not counting marinated meats like steak and chicken fahitas - making it much easier to eat without going over my RDI. This opens up a whole new world to me. There's got to be a way to make pizza on a lettuce wrap!

Just got back from my year-end performance review. It wasn't bad, but I told the boss "I gave ya everything I had, Captain; don't think I can do any better this year. You're just gonna have to give me a better rating for what I do do." And I think "do do" is what he thought of that. Anyway, we parted friends.

Whenever I fill out an application, in the part that says "If an emergency, notify:" I put "DOCTOR". What's my mother going to do? Think about it. Toodles!

Here's a few more wrap ideas (since I LOVE lettuce wraps). I like to buy rotisserie chicken from the market, shred it up and place it on some Green Leaf/Red Leaf/Butter Lettuce (since they're bigger). I add shredded carrots and parsley/cilantro, and make a sauce that I had when I lived in Hawaii. The sauce is made with light mayo and low sodium soy sauce...but I like to add sriracha sauce for my needed spicy factor. The sauce sounds weird, but it's really good in the chicken wrap. OR, instead of this creamy sauce, make a pico de gallo/salsa type sauce and spoon some in with the chicken. That's also yummy! Another wrap I like is Thai. It requires some cooking, but it's fairly simple. You can google/youtube it and it'll be easier than me explaining how to make it, I think. I love it! It's made with ground pork or beef (though you can use turkey), fish sauce, water, lemon, mint, parsley/cilantro, and ground rice powder (which is easy to make....though not really necessary to use). I also tried thin cuts of roast beef to make a Thai lettuce wrap. I found it on pinterest and it was really good. Hope this helps! And now I'm hungry! lol
