Hmmm 2000 calories yesterday, and I dropped a little. And I didn't go hiking yesterday. So much for calorie deficit theory. As long as I continue to drop, I'm going to continue Low Carb High Fat. It is certainly easy and tasty. And energy, wow! I feel fantastic.

I had a thought for those of you doing this same Paleo-dairy thing...What about making small Oopsie rolls to have with bruschetta or pieces of cheese?

I went to get a new headlight yesterday, and ended up having to get an entire new headlamp assembly on my Pilot. It was cracked, water was getting in and causing the bulbs to break. $800.Yes. Really. I keep reminding myself that I have a nice car and no payments, I'm still coming out ahead. Ouch.

I'm going to try the Oopsie this weekend, any tips? I'm excited! Hoping it will hold up with tuna and swiss for a tuna melt :-).

Congrats on the loss! Glad that it seems to working well for you. Yikes on the headlamp assembly but at least it is repaired now and you can mark that off of your list of things 'lingering'.

thynes, the best tip I have for Oopsie is to add some seasoning if you are going to use it for a sandwich type meal. I added rosemary and it was really good! I also left them wrapped in a paper towel instead of airtight for a few days, and they turned crunchy. Assuming you can resist it for a few days! I checked out the Low Carb group, very good posts! And Jaime, I will now feel safe at night, and the only thing lingering is the $800 on my credit card that I have to pay off this month. Thank goodness for my emergency funds.

Please give a try to the almost paleo bread recipe Tom Naughton web site at: http://www.fathead-movie.com/index.php/2012/10/15/too-good-bread-and-almost-paleo-bread/ It's actually not bad at all.

Cool - I know some people who swear by LCHF food plans - glad the scale moved for you. When I increased my fat, I stalled...so not sure it would work for me. But a while back I went from nonfat dalry to lowfat dairy and that change worked out pretty well - things taste better and I feel full longer, and lost weight.

I read that it could take a few weeks to really see results on the scale when going from starvation to LCHF. I was pretty close to starvation, around 800 calories a day except for when I had wine. And now, closer to 2000. That might be too much, but I've been told not to worry about my calories. Fat is just so high calorie, it doesn't take much to get to 2000. I can't imagine how many calories and carbs I was eating prior to March 10 when I weighed 247.
