So today I went to my sisters for dinner. She was making bolognese (and her bolognese is great) so i decided to try courgette 'spaghetti'. It's just courgette sliced finely with a mandolin and nuked until it's hot and about half cooked (so it's soft but not mush).

It's surprisingly good. But you need your bolognese almost dry because the courgette releases more liquid even after it's been drained.

Never thought about using courgettes like that so i might have to try it.

It works, it's bland enough to work, and I've got a new toy coming to make them better next time.
