Life is funny. I'm all happy because I put a new recipe together in my crockpot this morning; I took knowledge of other recipes and added my own twist, and came up with Island Chicken; adobo-style chicken breast with pineapple to bring me a taste of the islands, with sliced onions, shredded carrots, cabbage, and sliced crimini mushrooms, garlic, low-sodium soy sauce, apple cider vinegar,crushed pineapple with juice, pepper, and salt, using thin sliced boneless breast of chicken.
The funny thing is; we kids made fun of our mom's cooking when we were growing up, because she would put together things that didn't always taste the best, using whatever ingredients she had. I shudder to remember the jokes about having raisins in our chocolate chip cookies 'cause Mom ate half the chocolate chips before the dough was mixed up! She probably was trying to make our treats healthier.
Looking back, I know that she was only trying to make ends meet for us; five kids, a Dad who worked hard, and her as a stay-at-home-hold-it-all-together Mom.
I hope she's having a nice laugh now, with me hoping that my new dish will turn out tasty in 8 hours when I share it with my partner.
Thanks Mom; I'm glad I turned out like you! Off to my Silver Sneakers class!

Zumba Gold for me this morning,didn't really want to go but made myself get out the door. So glad I did always feel much better after. Your dinner sounds tasty.
