Mmmmm, mango salsa. We had a condo in Maui on vacation one year and it was right down the street from a Farmer's Market. We'd go off and play, sight-see, whatever all morning and get back to the condo about 3. I'd stick a roast chicken in the oven, then we'd go down to the pool. Then I'd make a fresh mango salsa using ingredients we'd bought that day and we'd have tacos for dinner. The kids (and hubby!) loved it!

I love mango salsa! Whenever I make it, it disappears because my daughter loves it too.
