I used pam cooking spray this time instead of olive oil. Tasted the same. VERY FILLING!

That looks awesome. Is that the fat head recipe? I've been itching for a pizza but have resisted so far. I made the fat head pizza about 6 months ago, long before I decided to try Keto, just to see what it was like.

I haven't tried fathead dough yet. I do have all the ingredients in my kitchen. The recipe is easy: Spray pan with PAM cooking spray (or rub with olive oil to make it nonstick) then put in shredded mozzarella cheese, season it wait for it to melt then add toppings (in my case canned mushrooms and black olive slices) add more shredded mozzarella cheese, wait for it to melt a little more. Using a spatula, lift the sides of the melted cheese to see if the bottom has browned - then remove from heat, serve. Once it cools it holds together nicely. I added garlic powder this time and it gave it a garlic bread taste. No crust – just melted cheese.

The oils in the cheese prevent it from sticking too - Don't use Mexican blend shredded cheese- for some reason the added spices made it stick and burn.

The chemistry of the fat head recipe is interesting to me. I tripled the cream cheese to Moz ratio to make it softer, and had almost a pancake batter that I fried. It came out like potato latkes, fluffy in the center and crispy on the outside. Really cool. I'll try your crust for a quick snack later this week. Thanks for the new avenue to explore :)

Thank you too @00Marx00 for the inspiration from your profile. I am going to experiment with the fat head dough and cream cheese pancakes this week. - I will let you know how they turn out =)

that is so cool I am guessing you cook this on the stovetop seeing as you say you melt it. awesome I will have to try it

You can do this in the microwave too - I oil a round of parchment paper, put the cheese on it, nuke until it's browned. Then add the pizza sauce, toppings and cheese and briefly nuke again. Cut with kitchen shears and enjoy! I have tried fathead and other recipes, they are more work, take longer, and taste "eggy" .

A cheese crust pizza crust? That is simply and utterly perfect! Did it come with any nutrition info i.e. fats, protein, CARBS, etc.? A must try, soon too!

The nutrition information is for how many cups of mozzerella cheese you use. I used 2 cups. You can use sauce if you would like to. I don't because I have a hard time not wasting an entire jar of low carb sauce for one tbls of sauce per pizza. Yes I used a small frying pan on the stove. I haven't tried the parchment microwave technique yet.

Nigella has a great recipe for a crustless pizza called "meatzza." Awesome.

Can’t do the crust less but I do get the Chicago south side thin crust with the fried egg in the middle.

For pizza sauce, you can mix spices with a small amount of tomato paste that comes in a tube. A "personal size" cheese crust pepperoni and mozzarella pizza is about 450 calories.
