Sous vide chicken breast and rice!
It's for our aging and ailing pup, not for me. Half that amount of rice would be pushing my daily carb limit!

And, we stay away from lean/low fat protein (mostly because it doesn't taste as good) but if you are from the camp that eats chicken breasts, pork tenderloin and other low fat and difficult to cook (easily overcooked and dried out) foods, please consider getting a sous vide immersion cooker. The prices have come down and you don't need a name brand with wifi and bluetooth. $50-$60 and you will consistently make the most tender and juicy chicken breasts - every single time. It's a game changer!
