Early dinner: Pork Belly Burnt Ends taco (3g net carb tortilla) with 'slaw, jalapeno and green onion!
Pork Belly seasoned then rested in fridge overnight. Smoked for three hours then braised in butter and low carb bbq sauce for another two hours. Not the same as the 'real' way with brown sugar and honey but that just isn't going to happen but it was still super tender and melt in your mouth!
It pains me when people don't enjoy the fun part of the diet. Sure, can't have a proper homemade tortilla, homemade bread, sugar, etc. but I'm going to enjoy everything else I can!
