Borscht! Yum! The food of my forefathers (& mothers!) I put tofu sour cream in mine...nondairy.

I have been overloaded with beets this year from my neighbor's garden. Made vegetarian borscht, roasted beet hummus, raw beet & strawberry smoothies. The veg borscht has been the best dish so far though.
