194 and falling! Only 9 pounds to go. We had a pot luck at work last night. In addition to the usual suspects, I ate a couple thin slices of potato and a 1/2" slice of zucchini bread. That was the first full-bore carbs in a couple months. The zucchini bread was awesome! I need to find a recipe for low carb calamondin cake. Most peeps outside of Florida have probably never heard of calamondin (I think it's a cross between a cumquat and tangerine). It is my favorite. Since I have the next couple nights off and lots of fresh calamondin fruits, I'm gonna give it a try. Any help with low carb baking is much appreciated!

Check out NutritionData.com/self -- it offers a massive food data base with detailed, full page analysis of each individual food. Includes rundowns of completeness of proteins, types of fats, nutrients as well as glycemic index. You can look up whole wheat flour, white flour, rice flour, coconut flour, sorghum flour and many, many others. Sorghum flour has one of the lowest glycemic indexes and was commonly used until soft, white, high gluten bread became the hit in the 1950's (think: 'Wonder Bread With The Yellow and Red And Blue Baloons On The Wrapper') Sorghum has no gluten but it makes great cookies, tortillas, muffins, scones, and pancakes as a stand-alone substitute for wheat flour.

They have recipes for desserts, entrees, soups - and all of them have pictures of the ingredients (or all of them I've come across) which makes shopping for some of the more "exotic" sounding items a lot easier when you're experimenting with new recipies. Hope it helps!!!

Thanks for the info and the support. I will use one of the lemon recipes and substitute in calamondin. I'm a pretty good cook for a guy, but baking... not so much. I doubt that my masterpiece will be worthy of a picture. I just hope it tastes good!

There are some good Keto recipes on SheCallsMeHobbit dot com. Most people outside a very small area in Florida know about Datil Peppers, either. A friend gave me a couple of pounds of them, and the recipe for a killer hot sauce with them.
