I've decided to ease my way into keto, by working with foods I'm comfortable preparing - which means a lot of Tex Mex influences. One of things I've done is cut out the obvious carbs, things such as corn/flour tortillas, grilled corn, rice and beans. For instance, today we had beef fajitas. I simply had the grilled skirt steak with grilled onions, bell peppers, zucchini and mushrooms. Topped it off with a generous dollop of guacamole and a glass of unsweetened ice tea.

I've also decided to incorporate more fat by preparing my coffee with heavy whipping cream and forgoing my usual milk and sugar.

I'm happy to say that my headaches have eased up tremendously, although I still feel a touch sluggish. I also notice that I'm not really hungry, so it's easy to resist the temptation to snack. That's a win in my book.

Tomorrow I plan to hit the gym and start off on the treadmill for as long as I can handle it. Hopefully, I'll be able to get a couple of miles in to start. Just want to note that my cardio will consist mainly of walking with a bit of elliptical thrown in. I have a medical condition that does not allow me to run or even jog. In a couple of weeks I plan on doing a bit of light strength training.

You seem to have a handle on this keto thing. It's tough to have the full comfort of TexMex without the carbs, but it can be done. I found 2 different low carb tortillas that each have an advantage. The Mission Carb Smart ones look, taste and feel like flour tortillas you're used to. 6g carbs each. The OLE foods Extreme Wellness are a little lower in carbs, but are more like a veggie wrap sheet than a tortilla. I'm going to experiment with deep frying those as chips this weekend. If you're headachey and sluggish, add salt to your daily intake, Keto is naturally diuretic, which flushes out electrolytes. 1/2 tsp salt and 1/4 tsp baking soda in 4 oz water will set you right.

Honestly, I've yet to find a store bought tortilla that measures up in any way to a homemade one. Talk about first world problems, LOL! I will admit that both corn and flour tortillas are a personal weakness, one that I will overcome. :) I've taken your advice and added a bit of sea salt to a glass of water earlier today. That did seem to help.

You're right about store bought vs. homemade! But after months of none at all, the store bought taste pretty darned good! LOL I'm glad the salt tip seems to help. It's a learning curve, for sure!
