Hello FatSecret community. Today is Friday July 1st 2016, I successfully weigh in at 184.4 pounds. I thought I was going to be 180 pounds for the 4th of July, But even if I fasted from today until Monday, I think that would be cutting it close, and I am already hungry like a bear this morning. But I did join the I.F. BEAST MODE 2.0, which gives me a new mini goal to shoot for. It's been about 1 week that I have been doing Low Carb. I posted some pictures of some of the things I've eaten this week. Manchego cheese is one of them. It is $15.00 a pound, and have never tried it before until recently. I must say it is very strong to the smell and taste. Melting the cheese tames it a little bit. And after chewing on the cheese for about 5 seconds once melted, you get flavors on the palate that are pleasing. The cheese is 120 calories per ounce. I used a cheese grater to shred it and saved it on a ziploc bag for when I want to use it. I also bought Gouda cheese slices, and I must say I will be buying that again. Bacon and eggs are always good / 1060 calories total for the meal. The new bag of coffee I bought in the bag is good too. The tortilla in one of my pictures with breakfast sausage links and cheese comes out to 210 calories and 33 carbs, the sausage links come out to 560 calories, and the two slices of Gouda cheese come out to 220 calories, 110 calories per slice. Total calories for the meal = 990. The turkey bacon is 770 calories, plus two slices of swiss cheese at 80 calories per slice, total calories = 930. Well I hope you all have a good 4th of July and good luck on your goals.

Well the Challenge isn't for another 8 hours so if you feel you need to then you can eat more. Call it pre prep. lol But starting tonight, be as strict as ya can.

I have a question about cholesterol on LCHF. I have high cholesterol and I am doing a high protein lowish carb diet that includes lean protein and very little added oil. (no potatoes, white flour, pasta, rice and no added sugar). How can you keep your cholesterol low while consuming so much dietary cholesterol?

Mamajamie, the cholesterol in your blood is not from your food. Its from your own body making it. Eat more Lemons. You are Vitamin C deficient. I mean REAL vitamin C. Your vascular system is torn up and the Cholesterol is your bodies way of patching the damage. Vitamin C repairs the damage. Cholesterol PATCHES the damage so vitamin C can fix it. If you eat a lemon or two a day, it will start repairing the damage and your cholesterol and blood lipids will go down naturally. I repeat, use LEMONS or LIMES. NOT over the counter Vitamin C. That isn't even vitamin C. Its Ascorbic ACID. Which is NOT vitamin C.

Nice loss Josh! Your special cheese sounds very exciting for a queso, I'm glad you joined 2.0 as I have joined too! We got each other's back, one hour of complete bliss followed by 23 hours of wondering what to eat tomorrow... But it really works!!! Happy 4th to you & your family!

Thanks SmartygirlCA. Queso sounds very good. I can imagine it with tortilla chips, but I will probably melt some in a small sauce pan soon & maybe spill some salsa on top of the melted cheese with a sprinkle of salt, and eat it straight up just to cut carbs. Cool you joined the 2.0. Hope you find something good to eat for the challenge. Yes we are in this together, hope you and your family have a good 4th of July.
