" Mom, you are so awesome!" is what my son just told me as I showed him everything I made today for the week. Meal prep Sunday was a success and I dont know why i ever stopped doing it. Laziness prolly. I made some chicken breast marinated with a homemade Mediterranean marinade I made myself, 3 cheese egg "puffs' (parm,cheddar and cottage cheese) but this time I added ham and veggies, fried two packs of bacon, steamed a broccoli head and carrots (for the kid), sauted kale, made tomato basil tuna salad and cut up some melon and other fruits. I got meals done up to Wednesday which is when Im off again so Ill make a new batch for the rest of the week.The best part is that my son and DH love it and Ive noticed I haven't had to throw away any veggies from going bad and I feel like I saved money this week at the store bc I bought the major items in bulk. I also only had red meat once this week with the exception of today (steaks for dinner).Feeling empowered again. Im almost done with the steroids dr gave me for the carpel tunnel and the pressure is def gone..This next week my work schedule is wonky bc some one is out and the holiday and a lot yada yada but I am not gonna let it mess with me (im a creature of habit and I hate to break my routine). Ive decided to break up the week into 2 parts.. 1st half is my normal schedule then thru and Friday are not so that will be part 2. Work out am 1st half, work out pm 2nd half. Its not rocket science. hehe. Work is so hectic right now and I tend to want to eat out of habit or stress and Ive caught myself doing that a lot in the past. Dont you hate that.. urg. Anyway, I stashed nuts every where in my office. Ill be lucky if the squirrels here dont try and pull a heist or something LOL. And plenty of cucumber and string cheese. I splurged on a diet 2 liter.. if that's the worst thing I eat this week, Ill be proud of myself bc busy season gets to me at times (im a dispatcher).All I can do is plan plan plan.. Immediate goals: Get to gym tomorrow early (holiday hours). Stay on track with my water. Log everything and take it one day at a time. Here's hoping every one has a great 3 day weekend and you catch up on your rest or workouts or what ever makes you happy. XOXO Andee
