jmb3450's Journal, 20 December 2014

Wrote Christmas cards, mailed them, went Christmas shopping, then to the grocery store, then spent the rest of the day making rum balls and Grand Marinier truffles for gifts. The truffles are out of this world good but took forever to make, lots of work for 28 of them. They'll go to family and a few special friends. Got a bunch of chocolate in the fridge I didn't temper properly, I'll use it for the filling in the batch next week for when my kids come over. This was my first attempt at making chocolate candy, next time I can probably get it done in half the time with better results. Hoping I can get the spilled chocolate out of my shirt. I did well eating except for whatever chocolate I consumed. Not sure how much it was, so much of it was little tastes to see how what I was making was turning out. I entered 4 bars into my food journal but I don't think it was that much. Didn't get a workout in, no time for it today. Anyway, it's amazing how tiring working in the kitchen can be, I'm plain pooped out. Time for a shower and bed...goodnight all.

Pretreat your shirt before washing. Chocolate is greasy.

tempering chocolate is not easy! I made lots of truffles but never did get the tempering right. so, I'm impressed! :) and working in kitchen is fairly good exercise. :)

Jim all that sounds so delicious. And to receive homemade truffles as a gift would be great. You are getting into the holiday for sure.

*quietly says* "I think working with chocolate is easy". QUIT LOOKING AT ME LIKE THAT! When I make my truffles I heat 8oz cream JUST to a simmer when I can see the bubbles forming around the edge of the pan, then I take it off the heat, add 12oz finely chopped chocolate, stir until shiny. Put it in the fridge until it solidifies. Done. I don't mess around with all that water bath nonsense. Once the chocolate is solidified scoop out, roll in topping of your choice, traditionally cocoa powder. I've never tried Grand Mariner truffles that sounds amazing.

OH! Cocoa powder with a bit of orange zest for your Grand Marinier truffles would be an interesting twist!

I'm not going to ask for your chocolate truffle recipe. Or the rum balls. I already googled them. Not making those! Too tempting. :)

Very tempting Deb, which is why I'm up 3 1/2 lbs over the weekend. But man are those truffles good! The majority were made as gifts which have been given out at this point, no rum balls left and just 6 truffles to take to Buffalo for family....I can't eat them or I'd be eating somebody's gift so they're safe. One of the perks of making them is having a valid excuse to sip on Grand Marinier as I make them. :)

Instantcrazy - once the ganache stiffens up in the fridge I rolled the balls in cocoa powder first before dipping in melted chocolate for the coating. I agree an orange zest would be a nice touch, or maybe a little strip of candied orange peel? Ideas for future use. If you like boozy chocolate these are incredible.
