Whooooops! Almost forgot to post today!! Well, my challenge is going...ok. During a cleanse, it's normal for you retain water the first few days as your body adjust, especially if you're exercising. So I have, oh, around 5 lbs of water weight stuck inside me. I've increased my water and water-rich veggies so hopefully that flushes it out quickly. Everyone wants to know everyone's progress (even though it's only been 3 days) and being the administrator I feel obligated and I want to be honest about it. It is normal though, just wasn't expecting 5 lbs. It'll come off soon, gonna have to sweat tonight!!

So also with this challenge, I'm in charge of getting everyone into their own routine that's do-able for them. I have tried everything with this one girl, she just will not adapt. She complained she didn't get to the grocery store, that it's too hot to workout, she has a headache, she feels bloated...yadda yadda...she is STRESSING me out. I can't please everyone and if she's not going to put forth the effort to make a real change and do these things, then I can't do anything for her. It's upsetting because we've been friends a while but I'm almost to the point of just saying c-ya! I have leant her product, I have allowed her to make payments plans, I have sent her free samples, I have sent her every exercise regimen I can think of for her to do at home since she claims she can't leave...and there's such a lack in gratitude, what a poop right?? Will update as things progress....

On a side note, I made zucchini pasta with proscuitto and whole wheat penne tossed lightly with EVOO and garlic salt last night, OMG it was delish!! Super quick, easy dinner idea folks!! Happy Tuesday...can't wait til Friday already!!

For my zucchini noodles, I like to make a creamy garlic, cilantro, avocado sauce (no dairy). It's so delicious!

I JUST saw a recipe on greatist.com for a similar sauce....using avocado, greek yogurt, garlic, and cilantro....great minds think alike!

Sorry you're having such trouble with that gal. Sometimes we do have to decide to just cut someone loose who won't try. You can help her, but you can't do it for her. Your recipe & the spiralizer both sound great. This is the 1st I've heard of a spiralizer, & oddly enough they were just discussing them on the Civilized Caveman posts I was checking out on Pinterest, & this is also my 1st time hearing about him ~ weird coincidence! I'll have to check out the spiralizer, I have a clue what it is just from the name, & it sounds like a great gadget for making veggie noodles which I've been wanting to do. Hubby doesn't like cooked zucchini or carrots tho, so not sure which veggie is good to use. Wishing you great success with your challenge!

I use them for zucchini noodles and if I want julienned carrots or something like that on my salad....I found it on amazon for like $10...just make sure you get the skin off first, it makes better cuts :)

I never recommend peeling zucchini when using a spiralizer since almost ALL of its nutrients are in the peel. Quoted from Livestrong.com: Zucchini is about 95 percent water by weight. Because most of this water is found in the vegetable’s flesh, its skin is a more concentrated source of nutrients. Not only is a peeled zucchini is lower in vitamin C and potassium, but it’s also virtually devoid of fiber and vitamin K. The skin itself is a rich source of antioxidant carotenoids, including lutein, zeaxanthin and beta-carotene. Just be sure to scrub well (and I soak my produce in a 10% vinegar solution to kill any surface bacteria).
