chicken meal ideas

Hi there, I currently am on a high protein diet and eat chicken for lunch everyday. I feel I have exhausted the chicken and sauce, chicken and rice, chicken and dressing chicken and salad routes... Any ideas on other things to out with chicken that is quick and easy.
I am cutting back at the moment preparing for a toned figure body building show in October
any suggestions would be helpful

I bake chicken drumsticks (which you can warm up later for lunch) and have asparagus on the side.
1st Goal: 150 lbs
2nd Goal: 135 lbs

Consider marinating chicken breasts. Slice them where they're sort of thin so they absorb the goodies. I do them overnight. Pan cook or throw on the grill. Lots of good marinades out there and it adds a twist to what can get to be boring after a while.

My newest favorite chicken recipe. Really good with some roasted broccoli or asparagus. Leftovers heat up well for lunch the next day.

Braised Balsamic Chicken

Ingredients:
6 skinless, boneless chicken breast
halves (pounded to 1/4 inch thickness)
ground black pepper to taste
salt to taste
2 tablespoons olive oil
1 onion, thinly sliced

1/2 cup balsamic vinegar
1 (14.5 ounce) can diced tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon dried thyme

Directions:
1. Season chicken breasts with ground black pepper and salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts.

2. Meanwhile, mix together balsamic vinegar, tomatoes, basil, oregano, rosemary and thyme.

3. Pour tomatoes and balsamic vinegar mixture over chicken and simmer until chicken is no longer pink and the juices run clear, about 15 minutes.

Sorry for the delay. Out of sight out of mind. I use McCormick Grill Mates marinades. Zesty Herb, Baja Citrus, Mesquite and A1 Savory Garlic & Herb.
