Avocados are everywhere now! I bought one and had a bit last night, it has an interesting almost nutty taste, but I'm not sure what to do with it, lol. What do you do with an avocado?

I will put slices in wraps, salads, tacos, or sandwiches. I'm the only one who eats them, so I put lemon juice on the portion I didn't use to save it in the fridge. You can also use it as a spread instead of mayo. I saw a recipe the other day for avocado ice cream, but I don't know if I could do that one.

I like them just halved with salt and black pepper. On the weekends, if I have a sandwich for lunch I will have an avocado instead of chips. If I have a veggie burger I will replace the fries on the side with an avocado.

I put sliced or diced avocado on eggs and use often in sandwiches and wraps as mars2kids mentioned.

I also recently started using them in smoothies. They add healthy fat and really make a smoothie creamy and delicious. I always just make up smoothie recipes with whatever I happen to have in the fridge and freezer. This morning I made one with: 1 cup 0% Greek yogurt, 1/4 cup diced avocado, 1 small frozen banana, 1 cup fresh spinach and 1 cup orange juice. It was quite big, so probably could be 2 servings. But I drank the whole thing.Very Happy

Avocado mixed with salt, pepper, chives, a little white vinegar just to make smooth. Mix it up and spread it on bread w/ a tomato and spinach leaves! THE BEST!!!

sandwich idea
avocado, tomato slices, cheese,on healthy whole wheat bread. Best when tomatoes are in season.

Avocados deliver almost 20 vitamins, minerals, and phytonutrients and they have healthy fats...Maybe make your own guacamole with garlic, chili powder, and cumin, but hold the salt.

1/2 Avocado with stuffed crabmeat, 4 ounces of crabmeat with a tad of mayo on a bed of lettuce about 6 carbs

In a salad, on a sandwich, in a taco...
Toss avocado, tomatoes, cilantro, lime juice, corn and a smidgen of salt in a medium sized bowl. Mix it well and chill, serve.

Avocados are awesome! I grew up with a tree in my backyard, and was SO sad the first time I had to go buy one. A dollar WHAT, ha!

Lime is a natural pairing - squirt a little into the well in the middle, maybe sprinkle some salt & pepper (or just lemon pepper, in a pinch) and scoop out with a spoon.

Avocado smoothies are AWESOME.

Guac is great - lime, a little garlic plus a fork is all you really need, but you could also add some chopped onions and tomatoes and maybe peppers or green Tabasco for extra flavors.

On any sandwich or in any salad or of course on any Mexican food.

I wouldn't put them in the fridge for too long, though - they do not appreciate being cold! Rub some lemon or lime juice on the flesh, then seal them away from the air (ziploc or in a tupperware). If it's a half avocado left, just place it face down on a plate.

Mix them with some garlic, salt, olive oil, some fresh chopped cilantro and lemon juice...
For a more creamy sauce you can add a little bit of low fat mayo and mustard...
Or just eat them as they come... Enjoy!! Very Happy

Ditto everything posted above plus they are great if you feel like a smoothie - good flavor & texture.

I'm not losing WEIGHT. I'm converting FAT to MUSCLE to be healthier.

When avocados are in supply, I mash them up with a little lemon juice and freeze in ice cube trays with plastic wrap smashed on top so they don't brown. Then when frozen, I can pop them out into a plastic bag. Each cube is about 2 T of avocado.

Oh, the smoothies I'm referring to are not made at home - an awesome banh mi shop makes them with boba (and craptons of sweetend condensed milk), ha!

But I have seen lots of yummy-looking recipes online (thank you, pinterest!) that ARE health & wellness oriented. I truly HATE bananas, but there are tons of recipes that combine them with avocados. Usually with some honey or agave plus some Greek yogurt - sometimes with orange juice or strawberries, or some other fruit too - even blueberries!

Avocados have a mild enough flavor that they can swing either sweet or savory quite easily - and the silkiness is just awesome. Worth a shot if you've never tried it!

I mash them with feta cheewse and lemon juice, season, and spread it on toast with slices of tomato for breakfast. OMG amazing.
I've never met a cheese I didn't like.
