I just made her "pizza" crust for lunch (no toppings, just the crust) with some modifications. It was yummy! And easy to make.
for the crust:
2 cups processed raw cauliflower (to the size of couscous)
2 cups part-skim shredded mozzarella
2 large eggs
2 Tbsp dried fennel seed (or your favorite seasonings)
I shredded the raw cauliflower in a cheese grater. I also used a blend of 6 Italian cheeses instead of mozzarella. Instead of fennel, my herbs were a pizza seasoning mix we get from Penzeys and a little s&p. http://yourlighterside.com/2012/11/cauliflower-pizza-crust-with-gourmet-vegetarian-toppings/
