as far as your post, sorry I just hijacked it. Maybe some sort of hearty casserole? chicken, veggies, cheese? or pound the breasts out flat, layer with some neufchatel cheese (sp?) its like cream cheese but better for you and whatever you like, I usually do something like spinach, broccoli, or asparagus, onion, bell pepper etc roll them up then bake til juicy and tender!

thats the spirit! 3lbs is amazing! did you by chance leave them on my thighs? ugh, I can't wait to have thin legs. sorry, I ramble, again congrats and keep the ideas coming people. Dinner time is around the corner

I sauteed them in strips in olive oil,with about 1/2 cup of mushrooms. added 2T of fresh minced garlic, 2 bay leaves, cooked them in 1 cup of chicken broth and 1/8 cup of balsamic vinegar for about 15 minutes. Added 3T heavy cream just before serving. It was delicious!
I am on Atkins Diet so it was perfect. If you are on another diet, you could probably cut the fat by using milk in place of cream. It tasted like a restaurant dish! Took the leftovers to work and put them on top of a salad (without the sauce.) **The original recipe called for adding corn starch to thicken the sauce but I didn't want the carbs.
** Goal 1- 20 pounds
** Goal 2- get back down to wearing size 16 jeans
** Goal 3- normal blood pressure
** Goal 4- well below "One" Derland

Mmm, I'm having whole grain pasta with pesto, onion, bell pepper, garlic, and tomato. I'm sure it'd be great to top with chicken, if you aren't on a low carb diet.

so I ended up making chicken breast covered in green salsa with a piece of queso asadero melted on top with a side salad. AHHMAZING !! My whole family loved it and didnt even notice it was low carb.

Im glad you found something, it sounded yummy! I thought I was making french onion soup but chicken cabbage broccoli and leeks somehow fell in, came out delicious and super low cal. Very filling though, ill have a meal for a day or two . Smile
