I take a rotisserie chicken from the market, strip the meat (discard bones and skin and fat) and cube it. Add a can of salsa, a box of (or homemade!) chicken broth, 2 cups of water, the juice from a lime, salt and pepper. I put in a can of black beans, but if you're doing low-carb you can skip it. Everything is cooked, so just warm it up and let the flavors meld a bit. Fast and delicious. I serve it with a fresh salad.

I use the rotiserie chickens too! I buy one every week and strip it to have in the fridge when I have no time. Make quesidillas using low carb tortillas, top salad, chicken salad and lettuce wraps and on and on. Yes it is better to cook my own chicken but I have little time so it's a great backup when time is short. Great for the kids on busy nights as well.

For a quick low carb soup...I take a cup of college inn ff and low sodium broth, add some chopped carrots and celery (buy the ready to go stuff too) and once the carrots are al dente I add in some dice chicken and warm through. Using 3 oz of chicken (mixed white and dark) and a 1/4 cup veggies comes to 215 cals, 24g protein and 1.7 net carbs and is very filling. Of course it's even healthier to use cooked chicken breast. When I think ahead I make up about 4 servings using a couple large chicken breasts. Then you can play with it once out of induction. I'll add spinach, beans, etc...

I never thought of egg drop soup !! what a great idea. I ended up on cabbage and sausage soup minus the potato I usually add just bc I have all the ingredients. Going to go with the rotisserie chicken tomorrow. There is enough left over for dinner with a side salad. Can wait. !!

Then I taste test it and add herbs and spices to taste. I always add heaps of chilli because I love it and it's so great for weight loss

It won't happen over night, but if you don't give up it WILL happen.
