Hoppy Easter, Everyone!

Taking the weekend off from counting calories, so I hope that everyone has a safe, happy, and healthy weekend!

We're doing finger foods -- or as fancy folk call them, "Hors d'oeuvres". It will be much healthier than foods you have to eat with a fork.

Because I'm gluten, egg, and dairy free, our menu is a little bit funky, but fun. What are y'all having for Easter? What's your plan for eating healthy?

Menu (only the stuff I can eat):
-Shrimp & crab with cocktail sauce
-Lox & vegan cream cheese on gluten free crackers
-Salami vegan cream cheese rolls
-Honeybaked Ham & Turkey
-Crudite w/dip
-Fruit tray (melon, strawberries, grapes, apples)
-Corn chips & salsa
-Jello cake (OK, this is the least healthy thing)

How do you make a gluten free Jello cake??? (My daughter has Celiac, & my mom is making a dessert that only has a little flour in the crust, & she went & bought GF flour to make it!!).
I actually have to work, so I'm going to my mom's after work--she'll have cold shrimp w/ her spicy cocktail sauce, cheese & crackers (which I'll avoid), ham, killer baked beans, (the recipe starts w/ bacon & goes from there--I'm going to limit myself to a spoonful), veggies, fruit, her chocolate dessert, & jello beans (got the jello mold for those years ago, & it's always a big hit--I make sugar free & sugared ones, so everyone's happy). She's also going to have cream puffs, & I might have one of those. I'm going to try to avoid the candy--my diabetes is fairly well controlled, but if I let myself splurge, the reading goes way up.

Losin25, your menu looks so yummy! I love finger foods because you get to eat a variety!

My husband and I don't have any plans this weekend so I think I may make a gourmet dinner tomorrow of Sea Bass with Prosciutto-wrapped asparagus and a hard-boiled egg to make it an Easter dinner! Wink

@Mcat - I bought the Betty Crocker Gluten Free Yellow Cake mix. I'm using Ener-G egg replacer for the eggs and vegan margerine for the butter. I also bought vegan coolwhip for the topping. It's totally 1970's glorious! I love those Jello beans. We did the eggs last year.

Jinks - Love Sea Bass! Your meal sounds totally delicious. We're away from family here in Seattle and we love that for the first time, we get to eat exactly what we want to. Smile

Good luck! I weigh in every day which has to stop. It is too easy to get caught up in the excitement of seeing the scale drop so much in a week-that is because of water weight I am sure.
