How do you define healthy?

Cookies are pretty much inherently not-healthy, but there are some that are better than others. I have a recipe in the database here for a cocoa meringue cookie that's not too horrible.

Here's my favourite gluten-free cookies recipe:
1 tablespoon softened butter
1 large egg
1 teaspoon vanilla extract
3/4 cup granulated cane sugar
1/2 cup toasted sesame seeds
2 tablespoons light buckwheat flour OR sweet sorghum flour
2 tablespoons tapioca starch
1/4 teaspoon salt

Place softened butter, egg and vanilla in a large mixing bowl. Whisk until thoroughly blended. Add sugar and whisk to blend. In a separate small bowl whisk buckwheat flour, tapioca starch and toasted sesame seeds together. Add the dry ingredients into wet ingredients. Stir until combined. make cookies and bake in preheated oven for about 7 minutes.

Hoser and Zoe, thanks for the recipes! I clicked, I saw, I saved. Smile

Jess, if you mean the cookie mixes in a box, most of them are not very diet-friendly -- they have a lot of sugar. You might do better using a "diet" cake mix of your choice to make cake mix cookies, which are super easy! Smile
