what I would do is wear a pedometer and then look at the distance that you cover by the end of the day. log it as walking (probably speed ~2.5mph). just estimate the time for the covered distance (time = distance/speed). Log the rest of the shift time as standing. say you worked for 8 hours, and according to pedometer walked 5 miles. 5/2.5 = 2 hours walking. 8-2 = 6 hours standing.
