Just made my first MIM this morning and added one tablespoon of sour cream and sprinkled a few almond slivers on top. Amazingly tasty. Will make again as a weekend break from eggs. Question does anyone know if you can make a bigger batch and bake them in muffin tins in the oven ? Guess I could just line up 6 coffee cups and do it that way too !! lol

I made them in the oven for the first time and they are dry but just as tasty. I made the recipe for 4 original muffins on atkins and devided them into 6 muffin tins cause they would have been too big for 4 tins and since i like to accompany them with either a banana, apple sauce or yogurt, i like them to be smaller.

Peanuts
My fat intake was around 50% today due to peanuts...Low Carbs today!!!!! Yeah. No Sugar!! Yeah..Trying too dial it in... Was hoping my proteins were as high as peanut intake..Suggestioms????
