Hey gang, I was wondering what your favourite, healthy vegetarian foods are that fill you up! I've been a vegetarian for 7 years and now that I'm not eating an obscene amount of carbs and high-fat food, I find that I'm constantly hungry within an hour of eating. What do other vegetarians use to stay healthy but feel full and satisfied?

Cheesy creamed cauliflower-so good and is a great comfort food-I just steam it, mix it with some salt/pepper, a wedge of laughing cow light cheese and maybe some nutmeg or curry powder using my immersion blender
Eggplant lasagna-I posted a recipe here a while ago. You can do a search for it.
Veggie Meatballs-I found soy protein fills me up really fast (sometimes uncomfortably so)
Veggie Chile (I use veggie crumbles and kidney beans)

Beans and nuts are always good options. Beans and lentils have an amazing amount of fiber in them, so they fill you up. Nuts are also filling because of the fat content, but you need to watch your intake closely as it is easy to go overboard with them. My staple for a quick lunch at work has been a can of beans and a can of Rotel for a while now. Sort of like a quick chili. I also usually eat two of the light string cheese sticks with my meals for a quick protein source.

For snacking, I like guacamole.. and I make it so I can add different things to it, so its never the same. How about Hummus? I love it, but need to try making it at home.
Sweet potatoe fries is an awesome comfort food.
Have you tried making stuffed acorn squash? Its much easier than it sounds and half a squash turns into a very filling dinner.

for a recipe. It's an awesome weight-loss site also. In my recipe, I add 1/8 cup chopped parsley and double or triple the garlic. Healthy, tasty, and vegan!

Another trick to control the portion size of nuts - always buy unsalted nuts. Salt is its own addiction and will cause folks to overeat.

Okay...now I'm rolling.
Ginger tea. Boil about 5-6 cups of water with 3-4 inches of peeled, sliced ginger. When it boils, reduce to simmer for 20 minutes or so. Then sweeten and enjoy. I use the yellow fake sweetner so it's zero calories but the warm, soothing, spicy liquid is good for the soul. Be careful not to spill any dark rum in it
