Vegetarians help

Good morning vegetarians. First let me say I admire you. This post is to ask for help with ideas of what to eat for lunch that is vegetarian I'm good on breakfast but I need noncomplicated lunches to take for work as I'm going to start eating two meals a day that are vegetarian only. Any advice would be greatly appreciated

Hi, I just heard about new cookbook that is out called Vegan Lunchbox. It sounds like it has lots of good ideas. I hope you can find a copy for free or cheap!

My fastest lunch is usually beans with something to spice it up. I'll throw a can of blackeye peas with a can of Rotel (tomatoes & peppers) and microwave it for a minute.

Lately I've been having a wierd recipe I just kind of made up one day. I've been turning wheat hot dog buns into garlic bread by adding spices and a little bit of organic butter or olive oil. Then I'll put a string cheese mozzarella stick in like it was a hot dog and bake it until it's toasted. Lightly cover it with some marinara and parmesan and you've got an awesome meal.

The trick with vegetarian meals is just finding out what you would normally have, and finding a substitute for it. If you want tacos, then have bean tacos. If you want pizza, have veggie toppings.

And there's always the good ol' peanut butter and jelly sandwich.
