Has anyone ever made a pumpkin pie with a big pumpkin? It says to use a small one, but all I have is this monster my hubby bought! I don't want it to go to waste. If not, tell me what to do with it and please include recipes.

You can freeze the extra pumpkin once you skin and cook it.

i cooked mine down and then put it in pitchers and froze it...used it for the next year or so...just thaw out what you want...works great

The only real difference in using a small pumpkin vs. a large pumpkin is that the smaller ones are sweeter. Oh, and the monsters are a pain to work with in the kitchen. Just cut it into managable pieces and roast it in the oven like you would a smaller pumpkin. Or however your recipe says to cook it, roasting is what I remember my grandma doing.
