I have lots of recipes that call for guar or Xanthan. Where can I find this? One cook book that I have recommends that you keep it in a shaker near the stove to thinken sauces without the use of flour.

i dont know about the guar gum but i know that you cn use whey or wheat protien ISOLATE (that part is very important. soy protien isolate can also be used but the resulting flavor isn't very good i hear. Make sure the isolate is unflavored , vanilla could make gravy taste funny!good luck with the gum

I found Xanthan at a local health food. I have used it a couple of times. I apparently have not gained the right techique to used this product correctly. It thicken up but not the rest of the sauce. I had better luck the 2nd time using the hand blender. It doesn't work like cornstarch.....
