Does anyone know an outlet for the Atkins Bake mix?? Do they make it anymore??? The only thing I can find are bars and shakes.

I have been able to make my own substitutions in different recipes with combinations of almond flour, coconut flour, walnut flour and you can also use soy flour but I cannot because I'm allergic to soy. Message me a recipe and I can help you make substitutions. Also check out sugarfreesheila.com for some great low-carb recipes.

Better than soy flour, get soy fiber, you can get it at health food stores. A cup is 4-5 carbs, if I remember right - it is mostly fiber. It works perfectly in sponge cake and cookies.

I can't have soy either, since it interferes with my medication, but my mom is a fan of the soy fiber.

Lettuce like THAT would be fine. That doesn't sound bad at all! Except we don't have that restaurant here. Probably any place can make something like that though! Thanks for the advice :)
