Black beans

Hey all, I have a bag of dried black beans any ideas of what to do with them? I know you can make black bean soup, but how? Any help would be greatly appreciated. Hope everyone has a happy and safe new yearVery Happy

Here you go, this is a South Beach recipe, it calls for canned black beans but if you rinse them soak them overnight and pre boil them for about 20 minutes, this might work?


Black Bean Soup

A favorite among Mexican soup recipes is The South Beach Diet's™ special black bean soup recipe. Special for two reasons: One, the soup is suitable for all phases of The South Beach Diet™ and two, it's a bean soup packed with unique flavors like fresh cilantro, lime, Worcestershire sauce, cumin and lots of garlic. This savory black bean soup is a must-have Mexican soup recipe, delicious any time of the year. Once you prepare this bean soup and taste it, we think you will agree that this is one of your favorite black bean bean soup recipes.

Serves 2

Ingredients
1/2 cup fresh tomato salsa (plus extra for garnish)
1 (15.5-ounce) cans black beans, drained and rinsed
1/2 can fat-free chicken broth
2 tablespoons fat-free sour cream (optional)
2 teaspoons fresh cilantro

Instructions
Heat the salsa in a large saucepan over medium heat, stirring frequently, for about 5 minutes. Stir in the beans and broth, then heat to boiling. Reduce heat to low. Cover and simmer 15 minutes. Cool slightly, then spoon half the soup into a food processor or blender and puree. Be very careful pureeing hot liquids. Return the pureed soup to the saucepan and heat through. Serve with 1 tablespoon of sour cream per person, cilantro, and additional salsa.

low number of serving recipes
Could we have a set of recipes for only one or two servings? Maximum 4 servings. So many great recipes are for 6-12 servings and with only me on the diet, some can't be frozen either.

Looking for LOW sugar and LOW Carb snacks
For snacks I have always preferred things that require more chewing, which usually makes you eat less. My go to's are almonds (low carb) and pork rinds (no carb).
