Does anyone have a recipe that is good for Phase 1?

Julienne all of your favorite vegetables, grate some ginger and get some minced garlic. Saute in a wok in a bit of olive oil and a dash of sesame oil, stirring constantly until vegetables are slightly tender, sprinkle some soy sauce towards the end of cooking. On phase 2 you can serve this over a 1/2 cup brown rice.

If you want to add strips of chicken, saute them first in some garlic, remove them from the wok while you cook the veggies and then add them back in at the end.

Some good choices of veggies are: white or green onions, celery, green peppers, bok choi, bamboo shoots, water chestnuts, green beans, broccoli and cauliflower florettes, carrots (if they are allowed on phase 1, I can't remember), mushrooms, bean sprouts, etc.

Have fun with it and experiment. A bit of advice, though, is to prep all the vegetables before they start cooking. Throw them all in at once.

I got this one off this site; or something like it; I think I improvised, but lived on this on phase 1-chicken breast dipped in ff italian dressing, and then in seasoned parmesan cheese (garlic powder, salt, pepper-whatever you like) then sauted in Pam. The coating doesn't exactly stick, but you can spoon on whatever fell off the chicken and it is quite tasty.
