I thought I'd share this chicken stew recipe, it's easy, satisfying and flavorful! Hope you like it!
Hearty Green Chili Chicken Stew:
2 lb. boneless chicken thighs - natural or organic preferred
2 lb. baby carrots
2 lb. baby new potatoes, unpeeled
2 sweet onions such as Vidalia
2 stalks celery, chopped
3 cans Hunt's diced tomatoes
4 cans Old El Paso whole green chiles
Add 2 Tbsp. basil or more, 1 tsp. cumin, & garlic as desired
Makes 16 servings
* I used a bag of frozen chicken breats (thawed), and I marinated (in mesquite) them over night. I browned them in pan, not enough to cook through, and put in crock… keep the marinade, put in pan after browning and add about 1 cup of water and cook for 10 mins and then add to crock.
**I added a can of black beans
***3 HUGE scoops of minced garlic (yum)
I didn’t have the vidalia onions, so I used one large yellow onion
I cooked on HIGH for 5 hours, could be on slow for 8-10 if you want, too. I used a wooden spoon to break up the chicken breasts and viola!!
