Does anyone have any quick and easy meal suggestions for someone who doesn't have a lot of time to cook or the energy after a 10 hour day?!

On days like that, I like to set up a meal in my crock pot so food is ready for me when I get home. Minestrone is a good one for that.

I think one of the keys is to plan your meals in advance, so that you can pre-cook or pre-measure things. So, for example, I made a batch of turkey meatballs and froze them. If I know I will have 4 oz the next day, I weigh out 4 oz worth and put them in the fridge the night before. If I know I will have salmon tomorrow, I put the frozen fillet in the fridge the night before and it takes 12 minutes to broil. I pre-cook my chicken. It's not as tasty as right off the grill or out of the oven, but it's fine on salads or re-heated in a stir fry. Pork tenderloin medallions take only a couple of minutes to pan fry ... ditto turkey burgers or lean beef burgers (I pre-measure 4 oz portions and freeze them individually, or buy already made 4 oz patties). Veggies cook quickly (and in most cases are probably even better raw). I'd love to hear from others on this, but at the end of the day, I think planning is the key.

Why can't I enter my own cals, fat and NET carbs when I add a new food to my daily food diary
If net carbs is really 2, then you should enter 11 under fibre and the rest under sugar or other. It should tally up net properly this way.
