I've been gluten-free for years. But mostly what I cook is plain stuff. Vegetables, meat, poultry, and fish, simply seasoned, with fruit and nuts for snacks and desserts.

I literally have the same situation...even worse I can't have eggs! it's hard to continually come up with interesting meal ideas...some staples: brown rice pasta, coconut oil (good sub for butter, makes a killer coconut-shrimp stir fry!), peanut butter & fruit makes a great breakfast and so does gluten-free oats, rice crackers/veggies & hummus! Yes, I am talking about muffins in a mug. They really fill me up and I don't eat more than 3 a day (3 meals, mostly 2). I track them and fit into my daily totals.
