I haven't used coconut milk, but I have unsed unsweented almond milk in place of cow's milk and it worked pretty well.

Coconut milk contains quite a lot of fat so I wouldnt drink it every day, but I use it for recipes instead of dairy milk. Here are some coconut milk nutrition facts and information on its benefits.

eat too much salt.
And if you're hypothyroid like me, you go through sodium pretty quickly, so you have to salt your meals just to prevent low sodium levels from contributing to your symptoms.
