Look up Crustless Spinch Quiche here under the recipes section.It is my fave! Great for a week of breakfast and my kids love it too!

I make a batch of egg "muffins" at the beginning of the week for breakfast each day. 6 eggs, dash of milk, salt and pepper, then as much spinach or other veggies that you want and a sprinkle of cheese. Should bake 6 muffins, and just one muffin is surprisingly filling.

If you enjoy any type of smoothie throw in a handful or two of fresh baby spinach and you hardly taste it. The colour is something you learn to ignore.

Try the recipe section here. I found an enchillada bake using spinach and it is delicious. I put it with some lettuce and other veggies and make like a taco salad for lunch or dinner and it is great!

I usually blend a banana with frozen blueberries or strawberries with a cup if unsweetened soy milk and a scoop of vegan protein powder. If I feel like adding some green I just throw in a handful if baby spinach...still tastes like fruit.

I do one with pinneaple spinach or kale 1cup, coconut water, little orange juice for the taste and a bannana I call it my mockers healthy pina colada! The other one is bananna, pineaple, kale, organic carrot and water or 1 tbs honey. Take away fruit if you want lower sugar balance and detox. Just harder to drink for me. Also you can add your favorite protein powder. I'm just now trying pea protein so all vegetables lower sugars slowely weening away. I'm on a diuretic and need the potassium so I add bananna. Also I'm a low salt diet, and no nuts or seed so this is really hard to balance my diet needs with calorie burning BOY appetites around me shakes are a necessity to hold em.

2 tsp olive oil or seasame oil
2 medium garlic cloves
1 tsp of seasame seeds
0 1/4 cup chopped red bell peppers

0 1/2 cup canned garbanzo beans (chickpeas), unsalted
Red Pepper Flakes to taste
1 pinch black pepper
In large skillet, heat olive oil or 1 tsp of seasame seeds oil over medium high. Add garlic, seasame seeds, and bell peppers and sauté 5 minutes. Add beans and sir fry 3 to 4 minutes until beans are thoroughly heated. Add spinach, salt, and pepper. Cook, stirring often, until the spinach wilts. Serve.

Frozen spinach is a money and time saver.

Heat in the microwave until hot, drain well, and season with salt, white pepper, a bit of nutmeg, and butter, cream, or cheese if you permit them on your diet.

Sure it's good to eat a variety of veggies but spinach contains beta carotene, lutein and xanthene...all good for eye health. Spinach also can help curb down blood pressure and stabilize blood sugar...prevent it from fluctuating often...it is also low in sodium.

You can use layers of steamed spinach in preparing lasagna. You can also enjoy your cooked spinach with pine nuts or in Spinach salads. Unless you are having kidney problems eating spinach should be fine as with kidney problems one should watch and control potassium levels.

I use frozen chopped spinach, usually the brand they have at Aldi which is particularly nice, pop two or three cubes of it in a microwave safe dish, sprinkle with salt, cover and microwave for about four minutes. Then I stir in a couple of tablespoons of natural Greek yoghurt and have it to accompany whatever else I am having at the time (which usually includes another green vegetable as well.)

There is an Indian spinach dish I love called Palak Paneer. Basically it's spinach curry with homemade cheese cooked with toasted and freshly ground cumin seed, coriander seed and black pepper seed. You also add tumeric, cayenne, fresh ginger, fresh garlic and tomato. Reduce 2 cups of chicken stock down to 3/4 cup and add it to the mixture. Brown the cheese cubes in a bit of oil and add them at the last minute. The traditional recipe calls for flour as a thickener but since I eat low carb I leave it out and add heavy cream.

Fresh baby spinach is also really good in smoothies. Believe it or not it doesn't have much of a spinach taste at all.

Try adding some salt and pepper and more cumin. Beans simply taste bland with no salt, but you should never initially cook them with it. Oil or fat isn't going to add flavor. If your making refritos ...
