Your fact sheet says that 100g of squid has a lower count of cholesterol fried in comparison to steamed/boiled. How can this Be?

First of all, the cholesterol is in the squid itself.
Fried squid contains less squid than boiled squid, as part of the weight of fried squid also includes the fat-drenched batter or breading on it.
Frying something does not add cholesterol to it unless you have chosen to fry it in something which contains cholesterol.
You shouldn't be worried about the tiny amount of cholesterol found in squid. The cholesterol your body makes for necessary maintenance of your nervous system is far smaller than any cholesterol you might eat.
Human life would not exist without cholesterol. Life is good.
