I was told that if calories fr whatever food one consumes within an hour after a work out will be burned off totally and the body will not store any calories from the food. One can therefore take the opportunity to indulge in food during that 1 hr period. Is this true? Question

Not even close, unfortunately.

Exercise will burn a certain number of calories. And in most people, it will in fact increase the number of calories you would have otherwise burned, post-exercise. This increase in post-exercise energy expenditure is not all that huge, however, and it is most definitely finite. It is also substantially lower than the energy expended during the exercise itself.

For some of the basics, see: Excess post exercise oxygen consumption (EPOC)

How do you log your steps per day? Over goal or all for exercise?
I just use googlefit. It tracks steps, miles and the time it took. Easy to log.
