congratulations on the start of your journey. My little piece of advice is to look at it as a lifestyle change rather than a diet, that way it will be more likely to stick to it for the long term.
Logging the journal regularly is the single most important decision you have made to take control of the weight problem. Try to focus on the process rather than the scale so that your motivation will not fade when the scale will not move as fast as you expect as it is inevitable after the initial period when you loose a lot of water weight which can fluctuate a lot.

Good luck! I weigh in every day which has to stop. It is too easy to get caught up in the excitement of seeing the scale drop so much in a week-that is because of water weight I am sure.

Need suggestions on healthy/low-calorie foods.
You can use shakes for a few days. I have used the Atkins shakes and they are very good tasting. Soups are good though as stated above you may have to puree them. You could puree or blend cottage cheese ...
