Plan to the best of your ability. Think about what sorts of things you can and want to eat while you're on the road.
Educate yourself about portion sizes. Restaurants are notoriously bad about serving huge plates of food, often two or even three normal-sized portions.
For exercise, most hotels have fitness centers. You can walk a lot when you're not working. You can also get a set of resistance bands and a door hook for exercising in your hotel room.
