Birthday cake low carb, tasty?

Hia everyone. My question to all. I'm trying to eat low carb and gluten "light" . So my b-day is fast approaching and I'm not sure what to serve and most important what cake does anyone know of good tasting low carb possibly gluten free that all my friends will eat too? If I can't find something maybe a gluten free muffin for me and a cake for everyone else. Thanks for any help.

Look for a low fat flourless chocolate cake-- there's a splenda version so would be low sugar & it's gluten free. I also made a " torta del re" -- theres a sugar free version on that uses almond meal/almond flour. Check my forum posts-- someone had a similar question & I answered a little more completely. I'm sorry I only found this post now, since it's probably too late, but just in case someone else stumbles in here with a similar problem I want to say that there's no need to worry. I used to do a lot of gluten, soy and dairy free baking back when I was a nanny (my boys had food allergies). Don't despair and don't let your friends convince you that gluten-free means taste-free, because it's not true. There are plenty of fantastic recipes out there!

As a general rule, the key to good gluten-free baking is the flour mix. Find a good one that works for you and everything else is easy. It's also very common in a lot of recipes to swap veggie purees or starchy fruits for binders like egg, and rice or hemp milk have fewer calories than cows milk with absolutely no noticeable difference.

Cooking for Isaiah by Silvana Nordone is one of the best gluten-free cookbooks out there. Every single thing I've made out of it has been a hit. Your friends won't even know the difference! If baking from scratch sounds like too much work, Bob's Red Mill sells a lot of pre-made, gluten-free mixes that are pretty tasty, too.

I will say that the Betty Crocker Gluten Free mixes are awesome, you can't really tell a difference.

Meringue cookies are always a hit-you can flavor them with about anything and use Splenda to sweeten them. When I am wanting something to share-these are my go to! Good luck,

Don't be afraid to defy tradition. Tomorrow will be the anniversary of the last time I had a dessert. For my bday I just made a really yummy, creamy fruit salad.
