Are any of you keeping track of how much Carbs Protein and Fat you're taking in? Or are you just counting Calories?

Primarily I am counting calories but I generally like to keep fat to 25% or less, Protein at 25% or more and the rest is healthy carbs - fruits and whole grains for the most part. I still like my french bread, pasta or rice - just need to watch the portion sizes. The more simple carbs (refined sugar) I consume the more I crave the junk. The more lean protein I consume the more I crave protein and veggies. The protein seems to keep me satisfied the longest and improves energy and mood too. It's getting to where the stuff I once craved just doesn't appeal to me as much anymore.
I am not on a diet - I have changed the way I eat.

I, too, am mostly counting calories, although I do have a running competition with myself: trying to get % of carbs consumed equal to % of protein once a week

I focus my eating on these points:
Do I like eating this? Does it make me feel full?
Does it make my body feel good and give me enough energy?
Does it have any adverse effects, eg dehydration, high cholesterol, etc.?
Does it promote health through macronutrients, vitamins, etc.?
Bottom line: I eat food based on these criteria within a limit of 1500 kcal/day. I try to get 40g fat, 80g protein and 120g carbs, though I have had a few days hitting 200g carbs. Regardless, I keep my focus on eating good food (less refined and processed) and staying at 1300-1500 kcal/ day. And it's working: 14 lbs lost in 7 weeks.
I am not losing weight. I am gaining health. Since April 24, 2012:
