I landed myself in the hospital to find out I fatty deposits on my liver. Now I have been instructed to avoid all fructose. Apparently it's the worst for you. So no more juices, pop, fruit or anything that contains fructose. I dranks lots of pepsi and juice! Now I am on a strict protien and vegie diet. I need more ideas on cooking vegies so I do not get bored eating them. Any ideas?

I LOVE to roast them, most any veggie, one of my favorite broccoli recipes is

Green beans too, my husband hated them until we did them roasted.

I cut back on the olive oil about half because I'm watching the calories. Asparagus on the grill, and leave until they get a little char, they taste a little like corn on the cob. Brush them lightly with garlic butter, when they are done.
I'm astonished, and kind of gratified, that your DOCTOR took you off fructose. I stopped eating it a year ago, kind of skeptically, because of the YouTube video "Sugar the bitter truth". The thing is kind of controversial, but I figured it wouldn't do me any harm to stop eating it and if helped, well so much the better. I do know I get full now, I don't feel hungry still after a reasonable amount of food. Good luck and I hope you get better.

How could anyone possibly get bored eating vegetables? They're endlessly versatile! As Katred12 said, roast them. Stir fry them. Make them into soups and salads. Use them in omelets and frittatas. Make stews.
Explore other cuisines. I recently made an excellent saag paneer-- two bunches of spinach, one bunch of mustard greens, homemade paneer (Indian cheese), onion, seasonings. Tres tasty!
Some of the finest restaurants in the world do tasting menus that are 100% vegetarian. Maybe you can use them for inspiration? Here's one from a restaurant that I really like:

If you can eat grains, the moosewood cookbook has a great chickpea and ginger salad I love. There are tons of recipes on epicurious too. Even if you just steam broccoli and then add olive oil and black pepper its great, lots of veggies are simple to make. Just don't overcook them and try to get fresh veggies to cook, not frozen, for the best taste and texture. I only use frozen for stirfry.
