I just wash well in a colander to get rid of the sand from the beet greens and scrub the beets themselves lightly with a sponge...you don't want to break the skin. Place large pot of water on stovetop add beets and greens attached. Bring to boil and simmer until beets are tender.Beets and greens should be young...older larger beets have bitter greens. Drain in colander...serve with salt and pepper and lemon wedge to juice over veggies. Other folks I know prefer a little malt or balsamic vinegar.
