Healthy Corned Beef and Cabbage Recipe... Does it exist?

With Saint Patty's Day just about here I was wondering if anyone would be willing to share a healthier way to enjoy it's traditional cuisine.

Probably not too high calorie with all the cabbage.

Have a smaller portion of meat, skip the potatoes and load up on cabbage, turnips, and carrots! The dish is just boiled so you don't have to worry about added fat from the cooking method.

Where I live, we have a few local butchers who corn their own meats. You can choose a leaner cut from them. But seriously, isn't the fat in cornbeef the best part? For St. Patty's day, I'm not even going to worry about it. I'm running a 5K in the morning and I'll be eating those calories burned!

Thanks Erika. I was leaning towards another crock pot recipe but I'll probably use this instead. I love Skinny Taste. One of my favorite sites!

SkinnyTaste is the BEST site! She also has a recipe for Corned Beef and Cabbage soup that looks really good and will probably my choice for the weekend.
